Starling Castle Riesling is a white wine from Rheinhessen, Germany, produced by Peter Mertes KG with an alcohol by volume (ABV) of 9.5%. This wine is made from 100% Riesling grapes. It is inspired by the flocks of starling birds that hover around the vines of the grand vineyards nestled among Germany's castles. Each harvest, these birds flock to the gently rolling hills of the Rheinhessen Valley, drawn to the ripe golden-green Riesling grapes of the region's most celebrated vines. The vinification process involves thinning excess grape clusters to ensure only top-quality fruit remains, followed by cold fermentation to preserve the grapes' natural sweetness and flavor. After fermentation, a secondary selection process ensures that the highest-quality Riesling is produced. Starling Castle Riesling is fresh, with a touch of citrus and pear, offering a semi-sweet profile with a fruity mid-palate and crisp acidity on an elegant finish. It pairs superbly with salads, fruits, light cheeses, spicy dishes, and desserts.
