    Del Maguey Barril Mezcal is an extremely rare Mezcal made from semi-wild maguey Barril, the largest and fattest of the Karwinskii family of agaves. These agaves, some over 30 years old, are carefully cultivated and distilled in the traditional clay and carrizo stills of Santa Catarina Minas. The magueys are roasted in a conical pit over hot rocks, buried under earth for three days, and naturally fermented with airborne microbes for thirty days before being distilled twice in ancient-style clay stills with bamboo tubing, following centuries-old Oaxacan methods.

    This mezcal offers a complex and layered tasting experience. The nose carries a spicy floral character of carnation with tropical notes of gardenia and jasmine, alongside ripe pear, dark fig, wet green hay, and forest floor aromas. On the palate, it enters soft and round, like caramel, with a full-bodied richness and a rich middle. It finishes long with flavors of roasted root vegetables, umami, terracotta, slate-like minerality, and a touch of salinity. With 49% alcohol by volume (ABV), equivalent to 98 proof, it is designed for responsible enjoyment.
