Del Maguey Pechuga Mezcal is a rare and seasonal expression crafted in Santa Catarina Minas, produced only at the end of the year to coincide with the harvest of wild mountain apples and plums. This mezcal begins with Minero mezcal, which has already undergone double distillation. For its unique third distillation, about 100 liters of mezcal are placed in the still with 100 kilos of wild apples and plums, red plantain bananas, pineapples, a handful of almonds, and a few pounds of uncooked white rice. A whole chicken breast is suspended inside the clay still during this process, allowing the vapor to pass over it and create balance so the fruit flavors do not dominate the mezcal. After distillation, the chicken breast is removed and placed in the family altar room as part of tradition.
The result is a crystal-clear spirit with remarkable complexity. On the nose, notes of basil, lemon, ocean, and fruit are present, with a smoky profile that is almost reminiscent of Scotch. On the palate, it is soft and salty, with subtle fruit notes and even a faint hint of chicken, adding to its distinct character. It has 49% alcohol by volume (ABV), or 98 proof. Like all Del Maguey Single Village Mezcals, it is designed to be sipped and savored rather than taken as a shot.
Del Maguey Pechuga Mezcal has been recognized with 92 points and a Highly Recommended rating at the Ultimate Spirits Challenge, further confirming its extraordinary craftsmanship. This limited and artisanal mezcal remains one of the most unique expressions within the Del Maguey portfolio, celebrating both tradition and the late fall harvest.
