    Product Description

Del Maguey San Pablo Ameyaltepec Mezcal is a rare and limited-edition spirit formulated in the remote Puebla Valley, where palenquero Aurelio Gonzalez Tobon leads Del Maguey's only partner family outside of Oaxaca. From this semi-tropical region, the agaves grow with views of the smoking volcanoes Iztaccihuatl and Popocatepetl, adding to the unique terroir. This mezcal is made from twelve to eighteen-year-old Papalote blended with a touch of Pizorra, showcasing the depth and elegance of two wild varietals. The agave hearts are roasted in underground earthen hornos, naturally fermented in the open air with ambient yeasts, and distilled to proof in a resaque-style alembic still, where the liquid passes through copper plates in a single distillation that captures purity and complexity.

With 47% alcohol by volume (ABV), 94 proof, like all Del Maguey Single Village Mezcals, this spirit is crafted to be savored slowly, never shot, allowing you to fully appreciate its nuances. The profile opens with incredibly floral aromatics of carnation and lilac, balanced by tropically sweet fruit and crisp citrus notes. On the palate, it is creamy, soft, and round, with a texture reminiscent of fresh goat cheese, leading to a finish of remarkable minerality and layered finesse.

Del Maguey San Pablo Ameyaltepec Mezcal is a distinctive expression of Puebla, uniting floral, fruity, creamy, and mineral characteristics into a spirit of memorable complexity that reflects both its origin and its artisanal production.
