Del Maguey Wild Jabali Mezcal is a rare edition composed from the challenging and seldom-seen Jabali agave, brought to life by the skilled hands of Rogelio Martinez Cruz, the same palenquero behind Del Maguey's celebrated Tobala, Tepextate, and Espadin Especial mezcals. Known for being notoriously difficult to work with, Jabali foams heavily at nearly every stage after roasting due to its unique chemical composition, making it one of the most complex agaves to distill. This edition showcases Rogelio's mastery and dedication to traditional mezcal-making, capturing the essence of this elusive varietal in its purest form.
On the nose, Del Maguey Wild Jabali reveals layered aromas of fresh figs, baked apples, star anise, and a subtle hint of Parmesan rind. The palate is followed by bright acidity, high floral notes of sweet violets, and herbal notes of tarragon, finishing with a hint of sandalwood for remarkable depth and balance. Bottled at 45% alcohol by volume (ABV), equivalent to 90 proof. Like all Del Maguey Single Village editions, it is best sipped slowly, never shot, allowing its intricate flavors to unfold fully.
