Devaux Cuvee D Brut is the flagship of the D Collection, representing the house style of elegance and complexity. Produced from 55% Pinot Noir and 45% Chardonnay, the blend draws fruit from the Cote des Bar, Cote des Blancs, and Montgueux, with up to 40% reserve wines sourced from over 11 different crus. Only the finest “coeur de cuvee,” or first pressings, are used, ensuring purity and refinement.
Fermentation occurs primarily in stainless steel, with a portion of the wine vinified in 200L oak barrels, followed by partial malolactic fermentation. The wine undergoes extended aging on the lees, with 1.5L bottles maturing for at least seven years and 750ml bottles for a minimum of five years, developing remarkable depth and persistence.
With an alcohol by volume (ABV) of 12% ABV, it offers both depth and refinement. This cuvee has received significant recognition, including 93 points from James Suckling and 90 points each from Wine Spectator and Wine Enthusiast. This Champagne pairs beautifully with foie gras, scallops, sea bass, grilled tiger prawns, lobster bisque, sweetbreads with truffles, crispy Thai snapper, or beef tenderloin, making it a versatile and gastronomic choice.
