Dona Paula Estate Sauvignon Blanc reflects the character of the Uco Valley, sourced from high-altitude vineyards in Gualtallary and Altamira. At 1,350 meters above sea level, the Alluvia site yields stony soils rich in calcium carbonate. In contrast, the Los Indios site, situated at 1,100 meters, features sandy loam soils with a similar mineral composition. These conditions, combined with cold climates, wide temperature variation between day and night, and low annual rainfall, yield wines of freshness, aromatic intensity, and balance. Sustainable practices are employed throughout the vineyards, which produce an average of eight tons per hectare. Grapes are handpicked in early April and undergo gentle destemming and a cold pre-fermentative maceration to preserve primary aromas. Fermentation at low temperatures follows, after which a brief maceration develops added texture and persistence. This wine contains 12.5% alcohol by volume (ABV). It pairs beautifully with seafood, goat cheese, salads, or herb-driven dishes, making it an ideal choice for light and refreshing meals.
