The Peregrine 2024 release builds on the popularity of its predecessor, Peregrine First Flight, by perfecting the balance of fruit-forward flavors, creamy textures, and a spicy, warm finish. The original blend relied on New Wood casks to thicken the mid-palate and soften the black pepper bite on the finish. However, for the 2024 edition, the ratio of Cognac to New Wood was adjusted from 60:40 to 70:30, allowing for a more mouth-coating texture and a greater density of orchard fruit flavors.

Complex Blending Process

This Found North Peregrine whiskey began as a blend of 21 and 24-year-old rye combined with 23, 24, and 25-year-old corn whiskey. The 24-year-old rye played a crucial role in providing a foundation of spice without astringency, allowing the rest of the blend to focus on texture and viscosity. After three months of aging in Cognac and New American oak casks, all but one barrel was used to make the final blend. This results in a whiskey that carries elegance, dynamism, and vigor. The aroma of Found North Peregrine 2024 opens with raspberry, nectarine, cocoa butter, magnolia bloom, and honey, creating a sweet yet delicate opening. It develops on the palate, and a vibrant rush of bright fruit, chocolatey currents, cinnamon sugar, and ripened red pear emerges, evolving into more complex layers of dragonfruit, molasses, and nougat. e finish is dynamic and lingering, bringing together deep notes of cloves, couverture chocolate, and apricots, followed by nutmeg and wood spice, creating a warm and satisfying conclusion.
