Kim Crawford Illuminate Marlborough Sauvignon Blanc 2020

We picked the grapes from different parts of Marlborough and removed the stems before gently pressing and fermenting them. We treated each section of the vineyard separately to make the most of their unique qualities and showcase them.

We employed a method called "Spinning Cone" to decrease the alcohol content in a portion of the initial wine. This technique uses low vacuum distillation to specifically remove alcohol without affecting the wine's aroma. We reduced the alcohol to less than 1% in around 60% of the total volume, and then blended back 40% of the original wine to achieve a final alcohol level of 7%.
