Maestro habanero Jose Salcedo Rios oversees the process, which involves roasting the agave in adobe ovens, fermenting with wild yeast in open-air containers, and double distilling in hybrid stainless steel and copper still. 

    This Raicilla is bottled at 43.9% alcohol by volume (ABV), and its flavor profile is strong and rich.
