Old Bourbon County Bourbon is a Kentucky straight bourbon whiskey from Old Bourbon County in Paris, Kentucky, United States, bottled at 55% alcohol by volume (ABV) and 110 proof. Rooted in the birthplace of bourbon whiskey, this expression draws inspiration from the late eighteenth-century origins of Bourbon County, where early settlers distilled corn-based whiskey using limestone-filtered water and aged it in charred oak barrels in Kentucky's mild climate. Produced by Hartfield and Co Distillery, the only distillery operating in modern-day Bourbon County, this bourbon is handcrafted from locally sourced grains using a mash bill of seventy percent corn, twenty percent wheat, and ten percent six-row malted barley. Distillation takes place in a five-hundred-gallon batch still in a single pass, a method chosen to retain flavor-contributing congeners in the new make spirit.
The whiskey is aged for a minimum of four years in 53-gallon oak barrels at the distillery in Bourbon County, allowing regional conditions to shape maturation. The process and profile emphasize historical method and local sourcing, resulting in a bourbon that balances sweetness, approachability, and structure. Old Bourbon County Bourbon can be enjoyed neat or with a small amount of water to explore its higher proof character. It pairs well with grilled meats, roasted dishes, or dark chocolate, making it suitable for slow sipping and reflective enjoyment.
