Signatory Vintage Ben Nevis 2019 5 Year Old

Signatory Vintage is widely regarded as one of the most discerning and respected independent bottlers of Scotch whiskey in the world. They typically bottle just one cask at a time, highlighting the characteristics that make these barrels unique. Ben Nevis Distillery was founded in the Scottish Highlands in 1825 at the base of Ben Nevis, the highest mountain anywhere in the UK. Historically available locally, they were purchased in 1989 by Nikka Whiskey, and for the last 30 years or so, more than 75% of their output has been sold in Japan.

Crafted from local mountain water with a unique brewer's yeast. Distilled in pot stills. Aged in Ex-Sherry and Ex-Bourbon casks. Bottled at 123.2 proof, 61.6% alcohol by volume (ABV). The peatiness is very different from your classics like Lagavulin or Laphroaig. This is a profound and soulful Scotch at a high proof, well suited to open up and gain more complexity with a touch of cool water or a cube, if you prefer.

Aromas: Cereal grains, roasted nuts, peat smoke, honeyed fruit, and citrus. 

Palate: The smoke comes out more on the palate, with candied nuts, cherry preserves, wild herbs, and biscuity malt. 

Finish: It finishes with lingering sweet smoke, candied lemon peel, and touches of flint.
